and use a sharp knife to cut the kernels off the cob. You can do this by either slicing downwards in a straight line or by rotating the cob and cutting close to the cob to remove the kernels in a spiral motion. Be careful not to cut too deep into the cob, as you want to keep the kernels intact.
    3. Once all the kernels have been removed, spread them out in a single layer on a baking sheet or tray. This will allow for even freezing and prevent them from clumping together.
    4. Place the baking sheet or tray in the freezer and let the corn kernels freeze for a couple of hours, or until they are solid.
    5. Once frozen, transfer the corn kernels into freezer-safe bags or containers. It’s important to remove any excess air from the bags or containers before sealing them, as this will help prevent freezer burn and maintain the quality of the corn.
    6. Label each bag or container with the date of freezing to keep track of freshness. This will also come in handy if you have multiple batches of frozen corn.
    7. Store the labeled bags or containers of frozen corn kernels in the freezer until you’re ready to use them. They will typically stay fresh for up to one year, but it’s recommended to use them within six months for optimal taste and texture.
By following these steps, you’ll have tasty and convenient frozen corn kernels that you can enjoy in your favorite dishes all year round.’

and carefully slice off the kernels, going from top to bottom.
    3. Place a sieve or colander over a bowl and scrape the sliced corn against it to collect any remaining juices.
    4. Pour the collected juice into a small saucepan and gently simmer it until slightly thickened, creating a flavorful corn broth.
    5. Transfer the corn kernels to a freezer-safe bag or container and seal tightly, removing any excess air.
    6. Label the bag or container with the date of freezing and the contents.
    7. If desired, pour the corn broth into an ice cube tray and freeze, then transfer the frozen cubes to a bag for easy portioning later.
    8. Store the bag or container of corn kernels and the corn broth cubes in the freezer for up to six months.
    9. Thaw both the corn kernels and the corn broth as needed and use them separately in your favorite recipes.

I’ve found that the best way to freeze corn on the cob is to blanch it in boiling water for a few minutes, then plunge it into ice water to stop the cooking process. After that, just pat it dry, wrap it in plastic wrap, and store it in a freezer bag. It tastes just as fresh when you defrost it!
